Did you know you can make ice cream at home without an ice cream maker? In fact, sitting in my freezer right now is a delicious tropical concoction waiting for willing gourmands! Chocolate Zucchini Cupcakes with Peanut Butter Frosting

These are seriously some of the best chocolate cupcakes I’ve ever had. I suspect that the additional zucchini makes them extra moist. Maybe it’s the peanut butter frosting which is also a mighty tasty combination. They are incredibly rich though such that they practically require a glass of milk in order to go down smoothly.
