Ideally, a family would prepare, cook, serve and eat one meal. They would do this together, enjoying one meal with fixings made at home. Most families find this tough to do these days, with time commitments and diverse (read: challenging and difficult) young palettes. To make family dinnertime fun, consider having breakfast for dinner once a week or so. Allow your family a bevy of choices: Pancakes, Eggs, Bagels, etc. Most of these dishes are easy to prepare so the role of short order BREAKFAST cook is an easy one to assume on these fun nights. Consider all of the different options available on Breakfast for Dinner nights: Eggs, Waffles, Pancakes, Cold Cereal, Hot Cereal, Cereal Bars, Bagels, English Muffins, Toast, Fruit, Sausage, Bacon, Ham, Pork Roll, Scrapple, Cream Cheesem Butter, Jelly, Peanut Butter, Juices, Milk, etc. If you are having trouble corralling the troops for a sit down dinner, this breakfast idea may do the trick. In my humble opinion, breakfast is the finest meal of the day and breakfast foods are the most delightful, fun and easy to assemble. Have your kids help slice up bananas to put on top of oatmeal or make blueberry pancakes by simply tossing a handful of berries into the batter once on the griddle (before the first flip). Let your kids mix a couple varieties of cold cereal together and experiment with textures and flavors. Ask for their help in settin the table. Let them bring out everything from the cupboards as there is no telling if a member of your family may end of needing a bowl, large plate, bread plate, spoon, fork, knife, etc. Your table may end of looking like a carnival but it will be a blast for the kids to be involved and have control over the their menu. Also, if your kids, like my daughter, are not typically allowed juice in the evening - make an exception on these fun nights. Personally, I cannot eat anything breakfast related without a big tall glass of cold Apple Juice, so we allow our girl to have a glass of it as well. Remember that food and eating should be fun and a time to be together. Having breakfast at the end of the day is a perfect way to bring everyone to the table. Now, dinner in the morning...that might take some getting used to!
